Here’s a peek at what I prepped this week: 5 easy family dinners + 2 quick desserts. These easy family-friendly meals are perfect whether you’re at home or packing a cooler for the lake/pool/water park.

🧑‍🍳 Meal Breakdown & Prep Tips

Day 1 – Sheet Pan Chicken Fajitas

An easy one-pan dinner that everyone loves.

Prep:

  • Toss with olive oil and fajita seasoning (or a taco seasoning packet).
  • Bake at 400°F for 25 minutes.

Perfect for when you need a treat but don’t want to turn on the oven.

Ingredients:

  • 1/2 cup butter
  • 1/2 cup milk
  • 2 cups sugar
  • 1/4 cup cocoa powder
  • 3 cups oats
  • 1/2 cup peanut butter (optional)
  • Vanilla extract

Instructions:

  • Combine butter, milk, sugar, and cocoa. Bring to a boil, then remove from heat.
  • Stir in oats, peanut butter (if using), and vanilla.
  • Drop spoonfuls onto wax paper and let cool.
