I really planned this one out because we just came back from a long vacation week and my budget was tight.

🍳 1. Turkey Zucchini Skillet with Potatoes

This one-pan wonder is cozy comfort food that comes together fast; perfect for weeknights when you’re 90% done before you even start.

Ingredients:

  • 1 lb ground turkey
  • 2 medium zucchinis, chopped
  • 3 medium potatoes, diced
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • Olive oil, salt & pepper

Instructions:

  1. In a large nonstick skillet, brown the turkey. Remove and set aside.
  2. Add oil and diced potatoes. Sauté until soft.
  3. Add zucchini, onion, and garlic. Cook until tender.
  4. Return turkey to the skillet. Season with salt and pepper. Stir and heat through.

  • 2–3 chicken breasts
  • 5 oz fresh spinach

Instructions:

  1. Preheat oven to 400°F. Season chicken with salt, pepper, and garlic. Bake for 20–25 mins.
  2. While baking, sauté spinach in oil and garlic until wilted. Stir in cooked corn.
  3. Serve chicken with spinach-corn mix on the side.

Tip: Try baking chicken on a rimmed baking sheet lined with parchment paper; cleanup is a breeze!

Ingredients:

  • 2 chicken breasts
  • ½ cup Greek yogurt

Instructions:

Instructions:

  1. Preheat oven to 375°F. Grease a glass baking dish.
  2. Line bottom with potatoes as the crust.
  3. Top with sautéed spinach and onion.
  4. Pour in whisked eggs. Sprinkle cheese on top.
  5. Bake 25–30 mins until center is set.

🍌 DESSERT 1: Banana Oat Chocolate Chip Cookies

These are so fast, naturally sweetened, and freezer-friendly. Bonus: no flour, no mixer needed.

Ingredients:

  • 2 ripe bananas
  • 1 cup oats
  • ¼ cup peanut butter
  • ¼ cup chocolate chips

Instructions:

  1. Preheat oven to 350°F.
  2. Mash bananas, mix with oats and peanut butter.
  3. Stir in chocolate chips. Scoop onto lined baking sheet.
  4. Bake 12–14 mins until set.

Kid-tested, mom-approved!

🍫 DESSERT 2: No-Bake Peanut Butter Yogurt Bars

These keep great in the freezer and taste like peanut butter cheesecake bars. Yes please!

Ingredients:

  • 1 cup Greek yogurt
  • ½ cup peanut butter
  • 1 cup oats
  • 2 tbsp honey
  • ¼ cup chocolate chips

Instructions:

  1. Mix yogurt, peanut butter, oats, and honey.
  2. Press into parchment-lined loaf pan.
  3. Melt chocolate chips and spread on top.
  4. Freeze 2+ hours. Slice into bars.
