This week’s Aldi meal plan for families is full of summer-friendly dinners that are healthy, affordable, and kid-approved. Everything was purchased at Aldi in Oklahoma for about $92–$97, including two easy desserts!

🍗 Monday: Mediterranean Chicken Bowls

A fresh, colorful dinner that comes together fast and tastes like summer in a bowl.

Ingredients:

  • 2 chicken breasts
  • 1 cup brown rice
  • 1 cucumber
  • ½ pint cherry tomatoes
  • ½ bag spinach
  • Feta cheese
  • Olive oil, lemon, garlic (pantry)

Instructions:

  1. Cook brown rice as directed. (Or replace water with chicken stock for extra flavor.)
  2. Grill or pan-fry seasoned chicken breasts (olive oil, garlic, lemon juice, salt, pepper).
  3. Chop cucumber, tomatoes, and spinach.
  4. Assemble bowls: rice, sliced chicken, veggies, sprinkle feta, drizzle olive oil & lemon.

🍲 Tuesday: Turkey & Veggie Stir Fry with Rice

Packed with protein and veggies, this dinner is a quick weeknight win.

Ingredients:

  • 1 lb ground turkey
  • 1 bell pepper
  • 1 carrot
  • ½ bag spinach
  • 1 cup brown rice
  • Olive oil, garlic, salt, pepper

Instructions:

  1. Cook brown rice as directed.
  2. Sauté ground turkey in olive oil until browned.
  3. Add chopped bell pepper, julienned carrot, and spinach. Sauté until tender.
  4. Serve over rice.
