Dinner Plan (June 30–July 6)

Note: These are optimized for bulk shopping, kid-friendly ingredients, and quick prep.

🍗 MONDAY: Chicken Meatballs with Garlic Parmesan Rice & Steamed Broccoli

Ingredients:

  • 2 lbs ground chicken
  • 1 egg
  • ½ cup breadcrumbs
  • ½ cup grated parmesan
  • 2 cloves garlic, minced
  • Salt, pepper, Italian seasoning
  • 2 cups white rice
  • 2 heads of broccoli
  • Olive oil

Instructions:

  1. Steam broccoli with salt and a drizzle of olive oil.
  2. Preheat oven to 400°F. Mix ground chicken, egg, breadcrumbs, parmesan, garlic, and seasoning.
  3. Roll into balls and place on a greased baking sheet. Bake for 20–25 minutes.
  4. Cook rice. In a skillet, heat oil with garlic and stir in rice, salt, and more parmesan.
  5. Steam broccoli with salt and a drizzle of olive oil.

🍲 TUESDAY: Rustic Beef & Veggie Soup with Cornbread Muffins

Ingredients:

  • 1.5 lbs ground beef
  • 4 carrots, chopped
  • 3 celery stalks, chopped
  • 4 potatoes, diced
  • 1 yellow onion, chopped
  • 1 clove garlic, minced
  • 6 cups beef broth (low sodium)
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 box Jiffy cornbread mix + 1 egg + milk

Instructions:

  1. Brown beef in a large pot with onion and garlic. Drain grease.
  2. Add carrots, celery, potatoes, broth, and seasoning. Simmer for 30–40 minutes until vegetables are tender.
  3. Prepare cornbread muffins according to box instructions and bake as directed.

🌮 WEDNESDAY: Ground Turkey Tacos with Guacamole and Fresh Salsa

Ingredients:

  • 2 lbs ground turkey
  • 1 packet taco seasoning or homemade blend (cumin, chili powder, paprika, garlic powder, salt)
  • 12 corn tortillas
  • 2 avocados
  • 2 Roma tomatoes
  • ¼ onion
  • 1 lime
  • 1 bunch cilantro
  • ½ head lettuce, shredded

Instructions:

  1. Brown turkey, add seasoning and water, simmer until cooked through.
  2. Mash avocados with lime, salt, and chopped cilantro for guacamole.
  3. Dice tomatoes and onion, mix with lime juice and cilantro for salsa.
  4. Warm tortillas and serve taco bar style with toppings.

🍕 THURSDAY: DIY Pizza Night (Homemade Dough)

Ingredients for Dough (makes 2 large pizzas):

  • 4 cups all-purpose flour
  • 2¼ tsp yeast
  • 1½ cups warm water
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt

Toppings:

  • 1½ cups shredded mozzarella
  • ½ cup parmesan
  • 1 jar pizza sauce or homemade (tomato paste + seasoning)
  • Optional: pepperoni, sliced olives, mushrooms, bell peppers

Instructions:

  1. In a bowl, dissolve yeast and sugar in warm water. Let sit for 5–10 minutes.
  2. Add flour, salt, and olive oil. Knead into a soft dough and let rise for 1 hour.
  3. Preheat oven to 475°F. Roll out dough, spread sauce, add cheese and toppings.
  4. Bake 10–12 minutes or until golden and bubbly.

🍗 SATURDAY: Sheet Pan BBQ Chicken Thighs with Sweet Potatoes & Green Beans

Ingredients:

  • 2.5 lbs chicken thighs (bone-in or boneless)
  • ½ cup BBQ sauce
  • 4 medium sweet potatoes, cubed
  • 1 lb green beans
  • Olive oil, salt, pepper, garlic powder

Instructions:

  1. Preheat oven to 425°F. Line sheet pans. I used these from Amazon!
  2. Toss sweet potatoes with oil, salt, and garlic powder.
  3. Trim green beans and toss with oil and pepper.
  4. Arrange chicken, potatoes, and green beans on the sheet pan. Brush chicken with BBQ sauce.
  5. Roast for 30–40 minutes, flipping once halfway through.

🍌 Banana Oat Muffins (No Refined Sugar)

Ingredients:

  • 3 ripe bananas
  • 2 eggs
  • ⅓ cup honey or maple syrup
  • ¼ cup melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1½ cups rolled oats
  • 1 tsp baking soda
  • Pinch of salt

Instructions:

  1. Preheat oven to 350°F and line or grease a muffin tin.
  2. In a bowl, mash bananas. Stir in eggs, sweetener, melted butter, and vanilla.
  3. Add oats, baking soda, and salt. Mix until just combined.
  4. Pour into muffin cups and bake for 18–20 minutes, until golden brown and firm to the touch.

🍪 One-Bowl Chocolate Chip Blondies

Ingredients:

  • 1 stick butter, melted
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • Pinch of salt
  • ¾ cup chocolate chips

Instructions:

  1. Preheat oven to 350°F and grease an 8×8 baking pan.
  2. In a mixing bowl, combine melted butter, brown sugar, egg, and vanilla.
  3. Stir in flour, baking powder, and salt until just mixed.
  4. Fold in chocolate chips and spread batter evenly in the pan.
  5. Bake for 20–25 minutes or until the top is golden and the center is set.
